Mixed Berry Mint Margarita Cocktail Recipe
One of the first cocktails we ever mixed was a watermelon mint margarita. It was born of necessity. We had an especially large watermelon, more watermelon than we could use at one time. So, we froze some of it. Later, we had to figure out what to do with frozen watermelon; so we did a google search on what to do with frozen watermelon, and the recipe popped up. We haven’t been able to find that website again to give them proper credit. They deserve it. Using frozen watermelon as the base of the drink is a stroke of brilliance: all of the cool of an iced drink, but with much more fruit flavor.
It’s become a rite of summer to make a batch for our first garden party on a hot summer day. In fact, we keep some frozen watermelon in our freezer so that we’re ready at all times should the occasion arise.
The occasion did arise a couple of weeks ago, but the crowd was a little too large for our store of watermelon. We did, however, have sundry frozen berries in our freezer as well. We thought we’d see if they would work in the same way. We don’t think this mixed berry version will replace the original watermelon one, but it was quite tasty, and almost as much a crowd-pleaser.
Feel free to adjust the proportions to whatever mixed berries you have in your refrigerator. They must be frozen, though.
Ingredients
- 2 cups frozen watermelon
- 1 cup frozen strawberries
- 1 cup frozen blueberries
- 1/2 cup tequila
- 1/4 cup sugar
- 1/4 cup lime juice
- 2 tsp lime zest
- 2 T mint leaves
Instructions
- Add everything to a blender.
- Blend until the watermelon is smooth.
- Serve.
